Limoncello is quite pricey and not always easy to find in Cape Town. I have always had a little fantasy about making my own, and this week’s Grazia magazine provided this recipe below in their article “Ooh, you shouldn’t have!” with the suggestion that it might make a nice home made Christmas gift.
Makes about 1 litre
750 ml vodka
225g white sugar
1. Place the lemons in a large saucepan and cover with boiling water. Leave to soak for 1 hour, then drain and pat the lemons dry. Finely grate the zest of the lemons and stir into the vodka. Set aside.
2. Meanwhile, place the sugar and 430 ml water in a saucepan and heat gently until the sugar dissolves. Bring to the boil and simmer for 3 minutes. Remove from the heat and leave to cool.
3. Combine the lemon-infused vodka and cooled syrup and pour into clean, dry bottles. Seal and store in a cool, dark place for a month, shaking gently from time to time.
